Just as water and oil do not mix there are challenges involved in bringing a water soluble nutrient, such as Vitamin C, into a fat soluble matrix like your cell membranes. 

LipoC is surrounded by lipids just as the cells in our bodies are - it is therefore able to pass through the digestive barriers and deliver the vitamin directly to the bloodstream.

What are liposomes?
